Presenter: Emily and Johnny Dickinson, Mousam Valley Mushrooms Description: Eat your way to better health with Emily Dickinson, owner of Mousam Valley Mushrooms, as she demonstrates how to cook Lion's Mane, Shiitake and other specialty mushrooms that she grows at her farm in Springvale, Maine. Each mushroom has its own particular flavor and nutrient characteristics—all are delicious when simply sliced, sautéed and enjoyed along with your favorite dish. Lion’s Mane is a culinary and medicinal mushroom known for its neurotrophic benefits with it's unique a crab-like texture. It is a choice edible and is known as the “smart mushroom” providing support specifically for cognitive function, including memory and attention. Shiitake is a more common variety, has a classic mushroom shape and brown color. It releases a garlic-pine aroma and has a rich, earthy, umami flavor and has beneficial anti-inflammatory properties.
